      Baker’s Math: flour is always 100%

      Every ingredient is expressed as a percentage of the flour weight, which is fixed at 100%. So water at 70% means 70 g of water for every 100 g of flour. Because flour is the anchor, you can scale any recipe up or down by changing the flour and multiplying every other percentage by it. That is the whole secret behind scaling a recipe from 1 loaf to 3.

      A 100% hydration starter is half flour and half water by weight. So half of your starter’s weight is really water that joins the dough.
